
What do you think, can I do a menu plan all year long? No, I’m sure not. I’ll try my best except for the weeks when Brian is in the field, then it’s just not worth it to try and plan. In the meantime though, here’s what’s on my menu:
Sunday: Meatball Subs w/ Garlic Bread (making extra meatballs and an extra loaf of garlic bread to freeze)
Monday: Grilled Cheeses w/ homemade tomato soup (this is an experiment, I have half a pint of canned meat sauce in the fridge to use up so I’m going to try to make soup out of it)
Tuesday: Lil’ Smokies for me, Meatballs in the crockpot for Brian (holding back some meatballs from Sunday for this)
Wednesday: Dijon Lamb Chops w/ roasted potatoes (our first time trying these chops, I’m trying this recipe)
Thursday: Tacos for Brian, ? for me (making extra taco meat to freeze)
Friday: Steak w/ buttered noodles
Saturday: Parmesan Crusted Tilapia w/ homemade fries (since Red Lobster doesn’t make this anymore I’ll do it myself, plus I’m going to make a big batch of alfredo sauce and freeze some)
Sunday: Homemade Pizza w/ breadsticks
I’m trying to make the plan flow better together and get some meals in the freezer as I go. What I really need to do this year is get better at packing my own lunch. Since I don’t like soups and I’m not big on meat sandwichs (I usually take PB&J) my lunches get boring fast. Then I’m tempted to go for fast food which is, well, gross when I think about it. Any ideas for good lunch food? I have access to a fridge and microwave at work.
salads, yogurt with granola and fruit, trail mix, muffins, granola bars….
I need to figure out the menu plan thing. I NEED to do it, but we never stick with one, so after a week or two of just scrapping the plan, I give up each time.
What happens to make you not stick to it? If it’s something predictable maybe you can plan away around it? We usually veer away from the plan at least one night a week so when that happens I skip the meal that takes the most work. 🙂

I love your meal plan. I made up a 6 week plan and we just rotate those 6 weeks all year long. This week we had:
Sunday- Bacon cheese burgers, fries
Monday- Dressing chicken bake with rice
tuesday- Butter Chicken
Wednesday- Roast beef on a bun with scallopped potoatoes
Thursday- crockpot spare ribs with rice and ceasar salad
Friday- Homemade pizza
Wow, you love my plan, I love your plan! You could share just about any of those recipes on your blog and it wouldn’t hurt my feelings any! 😉
I like having salads for lunch, i have one almost every single day. You can change those up constantly with the toppings and dressings you use, so they don’t get as boring. I like having baby spinach topped with vegetables and low-fat ranch some days and other days I like to top it with a little bit of dried fruit and a fruit-based vinaigrette.
I usually have a handful of potato chips too, salt & vinegar (i just can’t resist) or garden vegetable sun chips 🙂 If I don’t have salad I’m probably having a vegetable soup. Or I’ll pick and choose things like low-fat cottage cheese, yogurt, bananas, carrots, blueberries, apples, string cheese and oatmeal.
I’m not sure if you were looking for completely healthy choices but I just thought I’d share what works for me!
Great menu! I have trying to eat healthier lunches. Mosty a grilled chicken breast and a big salad, with the good lettuces, not ice berg! And I have been homemaking a ranch dressing that has 30 calories in 1/4 cup!
Cari & Jennifer, that is a really good idea on the salads. Chicken breast is on sale this week to so I could do the grilled chicken. Cari your pick and choose list sounds amazing – I love all those things except cottage cheese. Bring on the fruit. 🙂

We make extra for dinner and that is lunch the next day. A cold grilled cheese sandwich at lunch is surprisingly good. We usually bring salads too. Do you like beans? I usually soak and then cook a big batch of beans almost every week. They can be turned into a soup, burritos, blended up into a dip or just a simple hot bowl of yumminess with some cornbread. They travel well for lunches too.
You know I have never really done much with beans but I think I would like them. Thanks for the suggestion.

I used to take a lot of leftovers – stir-fry, pasta, even burritos work well. Also, I would try to pack a piece of fruit and sometimes some small cheese cubes. For salads, I would pack greens at home then keep dried cranberries, nuts, and feta cheese at work to sprinkle on top. Sometimes some crackers or some bread if I’m extra hungry! If you like cold food, pasta salads or grain-and-bean salads can be made ahead and portioned out, too.
I like the fruit and cheese idea. Fruit always makes me crave salt and I bet the cheese would quench that and fill me up a little more. Thanks, and nice to “see” you stopping by. I hope you’ll visit again.
